WThis is a simplified version of a beverage featured on a new cocktail list. This is a large-volume pre-mixed that is loaded with flavours of the Christmas time, which makes it ideal for a festive gathering. Save the extra syrup to use in morning drinks, puddings, or to mix more rounds of the drink.

Makes enough for 10 guests
For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Place the listed items into a pan, heat until it reaches a light boil, mixing so the sugar melts. Then, take off the stove and leave to reach room temperature entirely. Pour into an sealable bottle, cap it and store chilled, it will last for around one month.
To make Premix: Pour every liquids into a sizeable container, let it rest for 60 minutes, then filter it best through muslin, to ensure it's fully clarified.
When ready to serve: Measure 85ml from the premix into your cocktail shaker filled with ice, gently stirring carefully for a minute until cold. Strain into a frosted cocktail glass or similar, top with the cranberries and complete it by giving it a light spray of mandarin oil over the top.
